Rochefort is a Trappist brewery with a history that dates back to 1230, when the Abbey of St-Remy, also known as Abbaye Notre-Dame de Saint-Remy, was established. It was Rochefort’s count, Gilles de Walcourt, and his wife who founded this convent 1.5km away from the town of Rochefort. It was only until 1464 that Cistercian monks arrived in Rochefort and made the Abbey of St-Remy their home.

After years of peaceful living, destruction soon came for the brewery. The abbey’s first destruction was in 1568, where Protestant armies ran rampant and ravaged the abbey. Later on in 1650, the troops of Lorraine pillaged the abbey. Although the abbey was soon rebuilt, it was demolished again during the French revolution. The monks only managed to re-erect their buildings in 1887, as what remained of the abbey was confiscated in 1797.
Rochefort - The Heart of Belgium
Just when the brewery was starting to pick up on its production of beer, the First World War reached the abbey in 1918. Rochefort brewery had to halt productions for a while as the German occupiers confiscated the copper fittings from the brewing hall.

After the Second World War, Rochefort’s beer was on a decline due to the growing success of Chimay’s better known and more consistent brews. As a result, the Trappist monks from Chimay abbey decided to help its fellow Trappist brewery. Professor Jean Declerck from Leuven, who laid the basis for the current Chimay beers, together with his brother Théodore, advised the Rochefort monks to change their production methods, impose micro-biological controls and pay more attention to hygiene.
With Chimay’s kind assistance, the Rochefort monks managed to develop the recipes for the Rochefort beers we know today. While Brother Théodore was responsible for isolating the initial yeast strains, the yeast did not work well with Rochefort’s beers, so the monks had to replace it with another variety from the Palm brewery. With that, Rochefort managed to climb to success, and its beers are loved and enjoyed by many.

The Rochefort monks have been brewing since 1595, and with the help from the Chimay monks, the brewery now produces 3 different types of beer, the Rochefort 6, 8, and 10. The mildest of the 3, the Rochefort 6, was first brewed in 1899 with the medicinal purpose of aiding the sick. The 6 has a fruity, slightly herbal and sweet taste, with lots of farm fruits, rich banana, brown sugar, and tea-like flavours.
First brewed in the 1950s, the Rochefort 8 was originally intended to be a Christmas brew. However, due to its overwhelming popularity, the 8 is now in constant production and became one of the most recognisable Belgian beers today. The beautiful mahogany-brown Quadrupel has a well-balanced yet complex flavour; it has notes of chocolate, leather, and caramel.
Released alongside the Rochefort 8 was the Rochefort 10 - the strongest beer of the abbey that has a legendary reputation among Belgian beers. The 10 has flavours of leather, caramel, chocolate, plum, raisin and herbal hops, and its complex flavours are even appreciated by wine and whiskey lovers all over the world!

Rochefort beers are all bottle-conditioned and are known for their strength, as well as for their well-balanced yet complex flavours. The brewery is highly regarded among beer enthusiasts and its beers are considered to be some of the best examples of Trappist beers in the world.

Rochefort Brewery’s ethos

Like the other Trappist breweries, Rochefort Brewery uses the Authentic Trappist Product (ATP) logo on their beers. In order to use this certification, the brewery must fulfil the following requirements:

1) The product(s) must be made within the walls of a Trappist abbey
2) The product(s) must be made by or under the supervision of the monastery community
3) Most of the profit must be spent on social work

As such, Rochefort is not only known for its delicious beers, but also for its authenticity and commitment to its community. It is no wonder that Rochefort Brewery is one of the most recognised and highly-respected Trappist breweries in the world!
