In contrast to all the other Trappist Ales, the Orval Trappist brewery makes only one beer for the general public. First made in 1931, it has a complex and unusual flavour and aroma produced by a unique strain of yeast: Brettanomyces
Michael Jackson, a beer critic himself, considered the Orval to be a wonderful aperitif and a world classic. It's very distinctive taste is largely attributed to two parts of the brewing process: the use of dry hopping and the use of local wild yeast. The beer is matured at 15 Degrees Celsius for a minimum of four weeks on site before being distributed.
