In 2015, Matty Wilson tried his first glass of home brew by the courtesy of his cousin. Wilson’s cousin continued bringing his home brews to Wilson and within months, Wilson was making his own recipes. It didn’t take long for Wilson to realise that he wanted to start a brewery; he knew he had the skills and all he needed to do was to settle legislation issues.
Welcome to Wilsons
In order to fund his newfound dream of building a microbrewery, Wilson quit his mining job and sold the family home. In 2016, Wilson opened the doors to Wilson’s Brewing Company in Albany with his wife Jessica, but times were tough as Wilson had to work on the brewery without any wages for a whole year. Thankfully, his wife had a business at the time, which helped to keep Wilson’s dream and the brewery afloat.

Fast forward to 2018, Wilson and his wife’s hard work truly paid off. In less than 2 years since Wilson’s Brewing Company was established, it was struggling to keep up with the demand.

Wilson’s special brews

Every month, Wilson makes a seasonal brew using local ingredients from the Great Southern region. To date, he has used local mandarins, honey, whiskey, and even oysters in his seasonal range!

If you’re put off by the oysters, don’t worry as Wilson’s Akoya Pearl Oyster Dark Pale Ale doesn’t taste like oysters at all; all you get is the salt and calcium content from the shells which makes for a really smooth, dark, and velvety beer.
Besides its interesting seasonal beers, Wilson Brewing has a pretty solid core range including its most popular brew - the Rough Seas New World Pale Ale. When the first batch of Rough Seas was out, it didn’t look as appetising as it does today; the ale looked like a mess of chunky orange juice. Today, the new world Australian Pale Ale has a beautiful glittering copper haze body, fragrant tropical hop aromas, and a refreshing bitter hop finish.

Wilson Brewing Company’s ethos

Originally, Wilson started brewing as he wanted to introduce the flavours and styles of beers that he loved to his friends, family, and community. His passion for producing delicious beers for others not only motivated him to follow his dream, but it is also one of the central pillars of the brewery today.

Wilson Brewing has an immense pride in the local community of Albany and the potential the South West contains. It brews largely for the sake of the people of Albany, but also to let the rest of the world know Albany’s strength, culture, and history. As such, Wilson Brewing is committed to bringing the taste of Albany to the world by churning out fresh and delicious beers that showcase its local produce and identity.
