With the original Boon Gueuze Mariage Parfait as my base, I'm brewed with about 400grams of wild cherries per litre at a high spontaneous fermentation and aged in large oak barrels for about 6 to 8 months. I pour a deep red hue with a generous pink foam that releases aromas of tart cherry and sour lambic funk. My decadent palate follows the nose with the addition of mild hay, creamy vanilla, musky oak, warming alcohol, and other rich red fruits. As a traditional beer born out of only the most masterful craftsmanship, I have been awarded with the prestigious label of Guaranteed Traditional Speciality, and am a protected European appellation product.
As with all Gueuze Lambic styles, I can be aged for up to 20 years and my flavours will eventually evolve to be more refined yet concentrated. My brewmasters recommend that you pair me with a fine meal or aged cheese – just like how you would with red wine. Please pour me out slowly into your glass without disturbing the yeast sediment in my bottle and enjoy the taste of epitome Lambic brewing!
