Minimus Wines are unconventional even by Oregon standards. Each wine is an individually numbered, non-repeating experiment with assorted varieties, fermentation, and maturation techniques that eschew or break formal winemaking conventions. Winemaker Chad Stock also produces for Omero Cellars, and is widely known for breaking and pushes rules in the cellar even though he has a formal education in wine, majoring in enology and viticulture. Sommeliers and critics look at Minimus as a deep pool of individual expression of exploration, coming from a dedicated and thought-provoking winemaker.
