The Rochefort 6 is a top-fermented Trappist beer designed by the Abbaye Notre Dame de St Remy les Rochefort (Belgium). It pours a brownish-red colour characteristic of the old wines from Bourgogne. The beer is clear and lies on a yeast bed. Its carbonisation is quite high, and it is topped by a light head that has a moderate length on the glass rim. It features aromas of spices along with hints of deep and flavoured yeast. One will discern the predominant presence of the association malt - caramel. When tasting, you’ll perceive the sharp and lightly spicy attack in the mouth. The flavours are sweet, round and strong and offer to the palate a full taste until the finish. The latter features light acridness and balanced bitterness. This Rochefort is the acridest of every other Rochefort beers. Flavours of malt are predominant in the body of this beer featuring a malty and fruity character while spicy notes call for another sip.
