I was created in 1948 by the Trappist monks of the Scourmont Abbey, one of the largest Trappist monasteries in the world, to celebrate Christmas. But once I was released beyond the walls, every day became a celebration.
As the strongest member of the Chimay Trappist Ales, I am part of an elite group that loves to age to perfection. I have another name that is the Chimay Grand Reserve and have a powerful aroma with a highly complex flavor that transforms profoundly when aged in my bottle. When a Prince gifts an entire abbey to 17 Cistercian monks, they take the opportunity to transform it into fertile farmland. After years of hard work, the monks completed the brewery (and cheese-making plant) in 1862. Chimay Brewery is inspiringly resilient; it not only managed to survive the destruction wrought by the Second World War, but it also managed to isolate a unique yeast strain while recovering from the devastations of the war! Today, Chimay Brewery is the biggest and one of the most well-known among the 11 Trappist breweries in the world. Chimay is not only known for its uniquely flavoured beers, thanks to the special yeast, but it is also known for producing world-class cheese that pair perfectly with its world-class beers!
I've tried the Tripel from Chimay, but I gotta say... this Quadrupel is still my favourite. It is smooth like what the other reviews tell you, and oh so easy to drink. I'm a fan. Thirsty, thanks for introducing me to this drink. Possibly one of my top choices for dark ale ;)
strong dark belgian beers are really hit and miss for me. some of the more expensive, or highly rated beers you see knocking around don't really do it for me. but this one is damn near perfect a beer as you will find. it is really flavourful, but never overpowering or too alcoholic in its taste. super smooth and something you can take your time sipping or crush in minutes.
Superb beer, superb price tag. What more could we want?

I've always rated Belgian beers as the best but the Chimay Blue is by far my favourite!! This cute bottle pours a crackling 2" head with strong bready aroma. The taste is amaaaazzzing with beautiful flavours of smoke, caramel and aged alcohol. To top it all off $7 is a complete steal!
