My magic lies in simplicity and purity: I’m made with 300 grams of fresh raspberries and 50 grams of cherries per litre, blended with young and old Lambic matured in oak foeders. No syrups. No shortcuts. Just wild yeast, oak, and real, handpicked fruit.
Pour me and watch my glowing ruby body come to life, effervescent, tart, and fragrant like berries plucked fresh from the bush. The raspberries bring juicy intensity; the cherries add softness and a touch of roundness. Founded in 1978 and situated in the village of Lembeek that gave Lambic its name, Boon Brewery is a producer of wild fermented Belgian beers. By modernizing their brewery specifically for Lambic production, they have been able to bring brewing consistency and are extremely instrutmental in the restoration of this traditional beer style. With an array of talented Lambic blenders in their region, Boon has been globally regarded as experts on the care and maintenance of wooden oak vessels required for aging beer.
