I was born in 1955, and was originally intended to be just a Christmas brew. However, due to popular demand, I am now in constant production and one of the most recognised Belgian beers today. Like all other Rochefort ales, I was named after the original gravity scale measured in Belgian Degrees and made with the abbey's own yeast culture and water from the nearby, calcium-rich Tridaine spring.
My mahogany-brown pour comes with a fine, lacy head that emits an impressive aromatic bouquet of toasted cocoas, dark malts, raisins, jam and fig fruit notes. My palate is well-balanced but complex; dominated by a spicy dryness that develops into a soft chocolate, leather, and caramel traits. I am a beer that will not overpower and made to be savoured at your leisure. Like a fine wine, you should only enjoy me from a glass.

The Rochefort Brewery, or Rochefort Trappistes, is one of the only eleven Trappist breweries in the world. The monastery, Abbey of St. Remy, or Rochefort Abbey, was founded in 1230, and their monks began to brew beer within its walls sometime around 1595. Trappistes Rochefort handmakes full-bodied, deeply flavoured and bottle-conditioned dark ales that are now among the world's most highly-respected and sought-after beverages. As with all other Trappist breweries, the monks will not increase beer production based on demand or profit motives, but only enough to support the monastery and other charitable causes, resulting in its fairly limited supply.
