Built between 1883 and 1914, these century-old oak foeders are not just vessels — they are living archives of wild yeast, wisdom, and wonder. Inside their porous hearts, the gentlest strains of microflora have bloomed and evolved for generations, lending me their grace and depth.
I am Geuze Mariage Parfait — and as my name suggests, I am the “perfect marriage” of time, craftsmanship, and character. I am composed predominantly of three-year-old Lambic, unsweetened and unfiltered, chosen only from the most extraordinary casks. Blended with precision and affection, I undergo a secondary fermentation in the bottle, transforming over time into something layered, luminous, and everlasting.
Pour me slowly and behold my glowing golden body and gentle effervescence. On the nose and palate, I offer notes of citrus peel — grapefruit, lime — balanced by warming aromas of oak, clove, and soft vanilla. My soul carries a mild, wine-like acidity, rounded out with hints of young green apple and a whisper of whiskey’s phenolic allure.

Founded in 1978 and situated in the village of Lembeek that gave Lambic its name, Boon Brewery is a producer of wild fermented Belgian beers. By modernizing their brewery specifically for Lambic production, they have been able to bring brewing consistency and are extremely instrutmental in the restoration of this traditional beer style. With an array of talented Lambic blenders in their region, Boon has been globally regarded as experts on the care and maintenance of wooden oak vessels required for aging beer.
