My composition is a precise balance — 90% mellow 18-month-old Lambic, 5% bold 3-year-old, and 5% young Lambic — brought together for a secondary fermentation that unfolds slowly in the bottle, aging me into something extraordinary.
Behold my regal form: a radiant ruby-red pour crowned with a blush of rose foam. On the nose, I offer true cherry, not candy, not syrup, but ripe, sun-drenched fruit, gently layered with wild ferment complexity. Sip and you’ll uncover a tapestry of flavour: a Port-like richness, tart and sour cherries, and a subtle touch of dry oak from my time in barrels.
